Ingredients
  

For the Salmon
  • 4 fillets Salmon fresh or thawed for best results
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Black Pepper freshly ground for best flavor
For the Sauce
  • 1 teaspoon Garlic Powder can substitute with fresh garlic
  • 1 teaspoon Seasoning Salt all-purpose seasoning can work
  • 2 tablespoons Hoisin Sauce mix 1 tsp brown sugar with 1 tsp browning if unavailable
  • 2 tablespoons Soy Sauce tamari is a great gluten-free alternative
  • 1 tablespoon Brown Sugar can substitute with honey or maple syrup
For the Vegetables
  • 1 cup Bell Peppers feel free to mix colors
  • 1 medium Onion yellow or red preferred
  • 1 medium Tomato substitute with 1 tbsp tomato paste if needed
For the Aromatics
  • 3 cloves Garlic (fresh) can use more garlic powder if fresh is unavailable
  • 2 teaspoons Fresh Thyme use less if dried thyme
  • 1 whole Scotch Bonnet Pepper adjust amount based on spice level
For the Cooking Liquid
  • 1 cup Chicken Broth/Water vegetable broth can lighten flavor
  • 2 tablespoons Cooking Oil use a neutral oil with high smoke point

Method
 

Cooking Instructions
  1. Rinse the salmon fillets with lime or lemon juice. Season with salt, black pepper, and seasoning salt, set aside.
  2. Heat cooking oil in a non-stick skillet over medium-high heat. Fry the salmon for 5-7 minutes on each side, until golden brown. Remove and let drain.
  3. In the same skillet, sauté onions, garlic, bell peppers, tomatoes, thyme, and scotch bonnet until fragrant. Stir in hoisin sauce, soy sauce, and chicken broth.
  4. Return the salmon to skillet, spoon sauce over fillets, cover partially, and let simmer for 2-3 minutes. Spoon sauce again before serving.
