  • 1 cup Breadcrumbs for binding
  • 1/2 cup Parmesan Cheese grated
  • 2 teaspoons Italian Seasoning or a mix of oregano and basil
  • 1 cup Shredded Mozzarella Cheese
  • to taste Salt
  • to taste Pepper

Method
 

Cooking Steps
  1. Preheat the oven to 375°F (190°C) and prepare a baking sheet by greasing it lightly.
  2. Brush the mushroom caps with olive oil, then season with salt and pepper.
  3. Sauté minced garlic in a pan with olive oil for about 1 minute.
  4. Combine chopped spinach into the pan and cook until wilted.
  5. Stir in cherry tomatoes, breadcrumbs, Parmesan, Italian seasoning, salt, and pepper, mixing well.
  6. Fill each mushroom cap with the prepared mixture, packing it slightly.
  7. Top each filled mushroom with shredded mozzarella.
  8. Bake in the oven for 15-18 minutes, or until the mushrooms are tender and the cheese is bubbly.
  9. Garnish with fresh basil or parsley before serving.
