- Preheat the oven to 375°F (190°C).
- Generously sprinkle salt and black pepper on both sides of the pork chops.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the pork chops for about 3–4 minutes per side until golden brown. Remove and set aside.
- Lower the heat to medium and add butter to the skillet. Sauté the sliced onions for 20–25 minutes until golden brown.
- Add minced garlic and sauté for an extra minute until fragrant.
- Pour in the beef broth, scraping the bottom of the pan to lift any tasty bits. Add thyme and let simmer for 3–5 minutes.
- Return the pork chops to the skillet, nestling them into the onions. Sprinkle shredded Gruyère cheese over everything.
- Transfer the skillet to the preheated oven and bake for 10–12 minutes until the cheese is melted and bubbly, and the pork reaches an internal temperature of 145°F.
- Garnish with fresh parsley or thyme before serving and spoon extra onion gravy over each chop.
