  • 4 pieces Pork chops (bone-in, about 1-inch thick) bone-in is preferred for best results
  • 1 teaspoon Salt adjust according to taste
  • 1 teaspoon Black pepper freshly ground
For the Onion Mixture
  • 2 tablespoons Olive oil can substitute with vegetable oil
  • 2 tablespoons Butter or use olive oil for lighter option
  • 3 large Yellow onions, thinly sliced
  • 3 cloves Garlic, minced
  • 1 cup Beef broth low-sodium options work well
  • 1 teaspoon Fresh thyme, leaves
For the Topping
  • 1 cup Gruyère cheese, shredded or mozzarella/provolone as substitutes
  • Fresh parsley or thyme for garnish

Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Generously sprinkle salt and black pepper on both sides of the pork chops.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the pork chops for about 3–4 minutes per side until golden brown. Remove and set aside.
  4. Lower the heat to medium and add butter to the skillet. Sauté the sliced onions for 20–25 minutes until golden brown.
  5. Add minced garlic and sauté for an extra minute until fragrant.
  6. Pour in the beef broth, scraping the bottom of the pan to lift any tasty bits. Add thyme and let simmer for 3–5 minutes.
  7. Return the pork chops to the skillet, nestling them into the onions. Sprinkle shredded Gruyère cheese over everything.
  8. Transfer the skillet to the preheated oven and bake for 10–12 minutes until the cheese is melted and bubbly, and the pork reaches an internal temperature of 145°F.
  9. Garnish with fresh parsley or thyme before serving and spoon extra onion gravy over each chop.
