How to Make Drunken Noodles
- Cook the wide rice noodles according to package instructions, drain, and set aside.
- Whisk together oyster sauce, soy sauce, dark soy sauce, fish sauce, brown sugar, lime juice, and water for the sauce.
- Heat vegetable oil in a skillet over medium-high heat until shimmering.
- Add minced garlic and sliced Thai red chilies; stir-fry for about 30 seconds.
- Toss in chicken thighs and cook for about 5-7 minutes until browned.
- Add sliced onion, bell pepper, broccoli, and julienned carrot; stir-fry for another 3-5 minutes.
- Fold in cooked rice noodles, pour sauce over, and toss to blend flavors.
- Add green onions and fresh Thai basil; toss briefly until basil wilts.
- Plate noodles and serve with lime wedges on the side.
