For the Sauce
  • 2 tbsp oyster sauce adds richness
  • 2 tbsp soy sauce essential saltiness
  • 1 tbsp dark soy sauce for depth and color
  • 1 tbsp fish sauce for authentic Thai flavor
  • 1 tbsp brown sugar balances saltiness
  • 1 tbsp lime juice adds a zesty tang
  • 2 tbsp water to adjust consistency
For the Stir-Fry
  • 2 tbsp vegetable oil for frying
  • 3 cloves garlic minced
  • 2 pcs Thai red chilies sliced
  • 1 lb boneless skinless chicken thighs cut into bite-sized pieces
  • 1 medium onion sliced
  • 1 medium bell pepper red, sliced
  • 1 cup broccoli florets
  • 1 medium carrot julienned
  • 4 pcs green onions cut into pieces
  • 1 cup fresh Thai basil leaves aromatic
For Serving
  • 2 pcs lime wedges for squeezing over noodles

Method
 

How to Make Drunken Noodles
  1. Cook the wide rice noodles according to package instructions, drain, and set aside.
  2. Whisk together oyster sauce, soy sauce, dark soy sauce, fish sauce, brown sugar, lime juice, and water for the sauce.
  3. Heat vegetable oil in a skillet over medium-high heat until shimmering.
  4. Add minced garlic and sliced Thai red chilies; stir-fry for about 30 seconds.
  5. Toss in chicken thighs and cook for about 5-7 minutes until browned.
  6. Add sliced onion, bell pepper, broccoli, and julienned carrot; stir-fry for another 3-5 minutes.
  7. Fold in cooked rice noodles, pour sauce over, and toss to blend flavors.
  8. Add green onions and fresh Thai basil; toss briefly until basil wilts.
  9. Plate noodles and serve with lime wedges on the side.
