Method
 

Instructions
  1. Pour one tablespoon of olive oil into a skillet and set to medium heat.
  2. Add the diced yellow onion and green bell pepper to the skillet. Cook until softened and translucent, about 5 minutes.
  3. Toss in the chopped cremini mushrooms and minced garlic. Stir occasionally, cooking until the mushrooms are tender, around 4-5 minutes.
  4. Increase the heat slightly and stir in the pound of lean ground beef. Cook until browned and crumbly, around 5-6 minutes.
  5. Add Worcestershire sauce, ketchup, cornstarch, and low-sodium beef broth. Sprinkle in kosher salt and black pepper. Mix well.
  6. Reduce the heat to low and let the mixture simmer for about 10 minutes, or until it thickens.
  7. Top the beef mixture with shredded provolone cheese and cover the skillet for a few minutes.
  8. Spoon the cheesy beef mixture onto toasted brioche buns and enjoy!
