- Pour one tablespoon of olive oil into a skillet and set to medium heat.
- Add the diced yellow onion and green bell pepper to the skillet. Cook until softened and translucent, about 5 minutes.
- Toss in the chopped cremini mushrooms and minced garlic. Stir occasionally, cooking until the mushrooms are tender, around 4-5 minutes.
- Increase the heat slightly and stir in the pound of lean ground beef. Cook until browned and crumbly, around 5-6 minutes.
- Add Worcestershire sauce, ketchup, cornstarch, and low-sodium beef broth. Sprinkle in kosher salt and black pepper. Mix well.
- Reduce the heat to low and let the mixture simmer for about 10 minutes, or until it thickens.
- Top the beef mixture with shredded provolone cheese and cover the skillet for a few minutes.
- Spoon the cheesy beef mixture onto toasted brioche buns and enjoy!
