Preparation Steps
- Drain and Press Tofu: Place the extra-firm tofu between two layers of paper towels and set a heavy weight on top. Let it sit for 15 minutes to remove excess moisture.
- Slice Tofu: Carefully cut the pressed tofu into 1/3-inch slabs and then slice each slab in half to create 8 tofu steaks.
- Prepare Marinade: In a blender, combine olive oil, fresh lime juice, chipotle pepper, light brown sugar, salt, cumin, minced garlic, and ginger. Blend until smooth.
- Marinate Tofu: Brush the tofu steaks with the marinade, saving 2 tablespoons for later. Marinate for at least 15 minutes, up to 60 minutes.
- Grill Tofu (Pan Method): Preheat a grill pan over high heat and lightly coat it with oil. Grill each tofu steak for 4-6 minutes on each side.
- Grill Tofu (Gas Grill): Preheat your gas grill and oil the grates. Grill the marinated tofu steaks for 4-6 minutes per side, brushing with reserved marinade.
