For the Salad
  • 8 ounces Bowtie Pasta gluten-free pasta can be used as a substitute
  • 4 cups Spinach Leaves or kale for different texture
  • 1 cup Craisins dried apricots or raisins can be used
  • 1/4 cup Pine Nuts walnuts or sunflower seeds can be alternatives
  • 1 can Mandarin Oranges fresh orange segments can also be used
  • 1 pound Teriyaki Chicken Breast chicken thighs or pre-cooked teriyaki chicken are alternatives
  • 1 each Red and Yellow Bell Peppers any bell pepper variety can be swapped
  • 1 cup Snow Peas snap peas are a delightful alternative
  • 1 cup Broccoli cauliflower can be a fantastic substitute
For the Dressing
  • 1/2 cup Teriyaki Sauce homemade or store-bought options available
  • 1/4 cup Rice Wine Vinegar apple cider vinegar is a good alternative
  • 2 tablespoons Soy Sauce low-sodium varieties can be used
  • 2 tablespoons Sesame Oil adjust for preferred intensity

Method
 

Instructions
  1. In a jar, combine teriyaki sauce, rice wine vinegar, soy sauce, sesame oil, garlic powder, ground ginger, onion powder, salt, black pepper, brown sugar, and canola oil. Shake vigorously until well mixed and refrigerate until ready to use.
  2. Bring a pot of water to a boil and add the bowtie pasta, cooking it according to package instructions until it’s al dente. Drain the pasta and set aside to cool slightly.
  3. While the pasta is cooking, chop the teriyaki chicken and your selection of veggies: spinach, bell peppers, snow peas, and broccoli.
  4. In a large mixing bowl, add the cooked pasta, chopped chicken, and vibrant veggies. Drizzle the dressing over the top and toss gently until everything is evenly coated.
  5. Serve immediately or store in a sealed container for later enjoyment.
