Preparation
- Preheat the oven to 400°F (200°C).
- Sift together the flour, baking powder, sugar, and salt in a large bowl.
- Combine the room temperature butter and large eggs into the dry ingredients.
- Roll out the dough on a lightly floured surface to about 1/8 inch thick.
- Cut circles from the dough using a cookie cutter or the rim of a glass, about 3 1/2 inches in diameter.
- Fill each circle by placing about 1 teaspoon of your chosen filling in the center.
- Moisten the edges of the dough with a little water, then fold the circle into a triangle shape.
- Chill the formed cookies on a parchment-lined baking tray in the freezer for 15 minutes.
- Bake for 12-15 minutes, or until the cookies are lightly browned and crispy.
