Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Sift together the flour, baking powder, sugar, and salt in a large bowl.
  3. Combine the room temperature butter and large eggs into the dry ingredients.
  4. Roll out the dough on a lightly floured surface to about 1/8 inch thick.
  5. Cut circles from the dough using a cookie cutter or the rim of a glass, about 3 1/2 inches in diameter.
  6. Fill each circle by placing about 1 teaspoon of your chosen filling in the center.
  7. Moisten the edges of the dough with a little water, then fold the circle into a triangle shape.
  8. Chill the formed cookies on a parchment-lined baking tray in the freezer for 15 minutes.
  9. Bake for 12-15 minutes, or until the cookies are lightly browned and crispy.
