For the Dressing

  • Kosher Salt and Black Pepper To taste.
For the Vegetables
  • 2 pounds Broccoli Florets Other great options include bell peppers or snap peas.
  • 1-2 tablespoons Olive Oil Any cooking oil will also work.
For the Base
  • 4 cups Prepared White Rice Consider brown rice or cauliflower rice for a lower-carb alternative.

Equipment

  • cast iron skillet

Method

Cooking Instructions
  1. Begin by peeling, deveining, and removing the tails from the raw shrimp. For a quicker option, you can also purchase pre-prepped shrimp to save time.
  2. In a mixing bowl, whisk together honey, sriracha, rice vinegar, and seasonings. Reserve 1/4 cup of this marinade for serving and soak the shrimp in the remaining mixture for at least 30 minutes.
  3. Preheat a cast iron skillet over medium-high heat, adding a tablespoon of olive oil. Cook the marinated shrimp in batches for about 2-3 minutes per side until pink and opaque.
  4. Toss the broccoli florets with olive oil, salt, and pepper, then roast in the oven until crispy. Prepare the rice as per its package instructions.
  5. Plate the honey sriracha shrimp over your prepared rice and roasted veggies. Drizzle with the reserved marinade for extra flavor.
