Method
 

How to Make Bánh Bèo
  1. Soak mung beans overnight; soak dried shrimp for at least 2 hours.
  2. Boil mung beans until tender, about 30 minutes; mash gently with salt.
  3. Sauté soaked shrimp in oil until crumbly, about 8-10 minutes.
  4. Whisk rice flour, tapioca flour, salt, and water together until smooth.
  5. Bring water to boil in steamer; oil small bowls to prevent sticking.
  6. Pour 1 tablespoon of batter into each bowl; steam for 6-8 minutes.
  7. Sauté chopped green onions in oil until fragrant, about 2-3 minutes.
  8. Mix fish sauce, water, sugar, lime juice, garlic, and chilies until sugar dissolves.
  9. Top each cake with mung bean mash, shrimp, scallion oil, and serve with nuoc cham.
