Preparation
- Prepare the chicken by trimming the skin and bone from the thighs, then cutting them into bite-sized pieces.
- Toss the chicken pieces in a bowl with 2 tablespoons of cornflour, salt, and black pepper.

- Mix the sauce by combining light soy sauce, dark soy sauce, remaining cornflour, chicken stock, bourbon, and brown sugar in a separate bowl.
