Method
 

Preparation
  1. Prepare the chicken by trimming the skin and bone from the thighs, then cutting them into bite-sized pieces.
  2. Toss the chicken pieces in a bowl with 2 tablespoons of cornflour, salt, and black pepper.
  3. Heat the oil in a pan over medium heat. Add the minced garlic and ginger, sautéing until fragrant.
  4. Add the chicken to the pan, spreading them out evenly. Cook until browned and cooked through.
  5. Mix the sauce by combining light soy sauce, dark soy sauce, remaining cornflour, chicken stock, bourbon, and brown sugar in a separate bowl.
  6. Pour the prepared sauce over the chicken in the pan and simmer until the sauce thickens.
  7. Serve the Bourbon Chicken over boiled or egg-fried rice, garnished with spring onions and sesame seeds.
