- Combine ingredients: In a bowl, whisk together the peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes.
- Marinate salmon: Place the salmon filets in a shallow dish and pour the marinade over the top, ensuring they're well-coated. Cover and refrigerate for at least 30 minutes.
- Preheat your grill: Get your grill or oven preheated to medium-high heat.
- Prepare salmon for cooking: Remove the salmon from the marinade and let any excess drip off. Place it directly on the grill or in a baking dish.
- Cook the salmon: Grill each side of the salmon for about 5-7 minutes or until it flakes easily with a fork.
- Add peaches: In the last few minutes of cooking, toss the thinly sliced peaches onto the grill or into the baking dish with the salmon.
