Casserole Base

  • 3 cups Shredded Chicken Use rotisserie chicken for quicker prep.
  • 1 packet Taco Seasoning Adjust to suit spice preference.
  • 1 medium Yellow Onion May replace with shallots or omit.
Cheese Layer
  • 2 cups Cheddar Cheese Try a cheese blend for added flavor.

Method
 

Prep and Cook
  1. Preheat your oven to 350°F (175°C) and grease an 11×9-inch casserole dish.
  2. In a skillet, mix shredded chicken, diced onions, taco seasoning, and ¼ cup of water. Cook over medium-high heat for about 5 minutes until the liquid evaporates.
  3. Pour ½ cup of enchilada sauce at the bottom of the greased dish. Layer two tortillas, followed by 1/3 of the chicken mixture, another ½ cup of enchilada sauce, and 1 cup of shredded cheese. Repeat the layers ending with tortillas, remaining sauce, and cheese.
  4. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is melted. Let it cool for 5-10 minutes before serving.
