Prep and Cook
- Preheat your oven to 350°F (175°C) and grease an 11×9-inch casserole dish.
- In a skillet, mix shredded chicken, diced onions, taco seasoning, and ¼ cup of water. Cook over medium-high heat for about 5 minutes until the liquid evaporates.
- Pour ½ cup of enchilada sauce at the bottom of the greased dish. Layer two tortillas, followed by 1/3 of the chicken mixture, another ½ cup of enchilada sauce, and 1 cup of shredded cheese. Repeat the layers ending with tortillas, remaining sauce, and cheese.
- Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is melted. Let it cool for 5-10 minutes before serving.
