Cooking Steps
  1. In a bowl, mix Italian seasoning, garlic powder, salt, and black pepper. Coat the chicken breasts evenly with this mixture for a flavorful base.
  2. Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken breasts and sear each side for 2 minutes until they turn golden brown. Remove them from the skillet.
  3. Reduce the heat and add diced onion and minced garlic to the skillet. Sauté for 1-2 minutes, stirring frequently until they become fragrant and translucent.
  4. Pour in the fresh or canned tomatoes and chicken broth. Mix well, scraping any bits stuck to the bottom of the pan. Let it simmer for 5 minutes to blend the flavors.
  5. Stir in fresh basil and white sugar, then return the seared chicken to the skillet. Allow it to simmer for another 5-8 minutes, or until the chicken reaches an internal temperature of 165°F.
  6. Before serving, top the dish with additional fresh basil and grated parmesan to enhance both presentation and flavor.
