How to Make Chicken Thigh Stir Fry
  1. Marinate the Chicken: In a bowl, mix the boneless chicken thighs with soy sauce, dark soy sauce, minced garlic, cornstarch, and 2 tablespoons of rice wine. Allow it to marinate for 15 minutes for maximum flavor.
  2. Cook Chicken: Heat 1 tablespoon of oil in a non-stick pan over medium heat. Add the marinated chicken, cooking for about 5 minutes or until it’s fully cooked and golden brown. Then, set the chicken aside.
  3. Cook Vegetables: In the same pan, pour in 2 tablespoons of oil, followed by the sliced onions and shredded carrots. Stir-fry for approximately 5 minutes until the vegetables are softened and vibrant.
  4. Combine & Enhance: Return the cooked chicken to the pan and add chopped spring onions. Stir-fry on high heat for 20-30 seconds, finishing with a splash of rice wine for that aromatic touch. Serve immediately!
