  • 2 cups Cottage Cheese Can use low-fat for a lighter version.
  • 2 cups Fresh Spinach Kale can be substituted for extra flavor.
  • 4 large Eggs Use the freshest eggs.
  • 1 small Onion Shallots can be used for a milder flavor.
For the Flavor
  • 1 teaspoon Garlic Powder Fresh minced garlic can be added for a stronger flavor.
  • 1 cup Cheddar Cheese Can substitute with feta for a tangy kick.

Method
 

Directions
  1. Preheat your oven to 375°F (190°C).
  2. Finely chop one small onion and sauté it in a pan over medium heat for about 5 minutes until softened. Add minced garlic if desired.
  3. In a large bowl, mix together the cottage cheese, sautéed onion and garlic, chopped spinach, eggs, garlic powder, salt, pepper, and half of the cheddar cheese. Stir until well combined.
  4. Lightly grease a baking dish with nonstick spray. Pour the mixture into the dish and sprinkle the remaining cheddar cheese on top.
  5. Bake for 30-35 minutes until golden and set.
  6. Let it cool slightly before slicing. Serve warm or at room temperature.
