- Preheat your oven to 375°F (190°C).
- Finely chop one small onion and sauté it in a pan over medium heat for about 5 minutes until softened. Add minced garlic if desired.
- In a large bowl, mix together the cottage cheese, sautéed onion and garlic, chopped spinach, eggs, garlic powder, salt, pepper, and half of the cheddar cheese. Stir until well combined.
- Lightly grease a baking dish with nonstick spray. Pour the mixture into the dish and sprinkle the remaining cheddar cheese on top.
- Bake for 30-35 minutes until golden and set.
- Let it cool slightly before slicing. Serve warm or at room temperature.
