Ingredients
  

For the Roast
  • 3-4 lbs Chuck roast use a marbled cut for tenderness
  • 1 tsp Sea salt adjust to taste
  • 0.5 tsp Pepper
  • 1 Tbsp Italian seasoning
For the Vegetables
  • 5-6 cloves Garlic minced
  • 1 Yellow onion sliced
  • 1.5 lbs Petite potatoes
  • 1 lb Baby carrots
For the Liquid
  • 1-1.5 cups Beef broth
  • 1 Tbsp Worcestershire sauce
Optional Enhancers
  • 0.33 cup Red wine or balsamic vinegar 2 Tbsp
  • 2 Tbsp Corn starch optional thickener
  • 2 Tbsp Water to mix with corn starch

Method
 

Directions
  1. Season the chuck roast generously with sea salt, pepper, and Italian seasoning.
  2. Place the seasoned roast in the bottom of your Crockpot.
  3. Add minced garlic, sliced onion, petite potatoes, and thick baby carrots on top of the roast.
  4. Pour the beef broth and Worcestershire sauce over the ingredients.
  5. Cook on low for 8-10 hours or on high for 4-5 hours, until the meat is fork-tender.
  6. Mix corn starch with water to create a slurry and stir it into the pot 30 minutes before serving.
  7. Add red wine or balsamic vinegar, if desired, and let it simmer a bit longer before serving.
