  • 2 cups Cheddar Cheese Can swap with Monterey Jack or Colby cheese
  • 1 cup Sour Cream Softened cream cheese or heavy cream can be used
  • 1 cup Beef Broth Vegetable broth for a vegetarian option
  • 2 tablespoons Olive Oil Butter for richer taste
  • to taste Salt & Pepper
  • 1 teaspoon Dried Thyme Adjust to taste
  • 1 teaspoon Paprika Adjust to taste

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. Peel and dice the russet potatoes into uniform pieces. Chop the yellow onion and mince the garlic.
  3. In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they become soft and fragrant, about 3-4 minutes.
  4. Add the ground beef to the skillet with the sautéed onions and garlic. Season with salt, pepper, thyme, and paprika, browning for about 5-7 minutes.
  5. Pour in beef broth and let it simmer for 2-3 minutes.
  6. In a large bowl, combine the diced potatoes with the beef mixture, stirring in sour cream and half of the cheddar cheese.
  7. Transfer the mixture into a greased baking dish and top with the remaining cheddar cheese.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake for an additional 10-15 minutes until cheese is bubbling.
  10. Let cool for 10 minutes before serving.
