For the Tortillas
  • 8 Corn or Flour Tortillas Lightly fry them beforehand.
For Assembly
  • 2 cups Enchilada Sauce Choose between mild or spicy.
  • 2 cups Shredded Cheese A mix of cheddar and Monterey Jack.

  • Cilantro/Jalapeños Optional.

Instructions

  4. Spoon the beef mixture onto each tortilla and roll them tightly. Place seam-side down in a greased baking dish.
  5. Pour the enchilada sauce generously over the rolled tortillas and sprinkle with shredded cheese.
  6. Bake in the preheated oven uncovered for 20-25 minutes, or until the cheese is bubbly and golden brown.
