Basic Preparation
- Preheat your oven to 425°F (220°C).
- Whisk together the egg and heavy cream in a small bowl to create your egg wash.
- Defrost the puff pastry completely, gently roll it out, and cut it into 6 equal rectangles.
- Arrange the rectangles on a parchment-lined baking sheet.
- Spread about 2 teaspoons of dijon mustard on each rectangle, then place the ham strips and gruyère cheese down the center.
- Brush the edges of the pastry with the egg wash and pinch two opposite corners together to seal.
- Brush the tops of the pastries with more egg wash and sprinkle with fresh thyme and everything bagel seasoning.
- Bake in the preheated oven for 20-25 minutes, or until puffed and golden brown.
