- In a large pot, warm the olive oil over medium heat. Add the beef stew meat and brown on all sides, about 5-7 minutes.
- Toss in the diced onion and chopped celery, stirring occasionally until softened, around 3-4 minutes.
- Stir in the minced cilantro and parsley, followed by the water, crushed tomatoes, lentils, and chickpeas.
- Add ground pepper, ground ginger, salt, ground turmeric, and ground cinnamon. Increase heat and bring to a boil.
- Lower the heat and let it simmer for about 30 minutes, stirring occasionally.
- Gently stir in the fideo noodles or broken vermicelli. Continue to cook for another 5-7 minutes until tender.
- Taste and adjust seasoning if needed, then ladle into bowls and garnish with additional cilantro.
