  • 1 pound beef stew meat Cut into bite-size pieces for tenderness.

For the Aromatic Boost
  • 3/4 cup minced fresh cilantro Divided.
  • 3/4 cup minced fresh parsley Divided.
For the Hearty Ingredients
  • 1 cup dry brown or green lentils Rinsed.
  • 1 cup no-salt-added canned chickpeas Rinsed.
For the Seasoning
  • 1 tablespoon ground pepper Gives the perfect kick.
  • 2 teaspoons ground ginger Adds warmth.
  • 1 1/2 teaspoons salt Adjust for taste.
  • 1/2 teaspoon ground turmeric Adds earthiness.

For the Noodles
  • 1 cup fideo noodles or broken vermicelli Soak up the broth.

Cooking Instructions
  1. In a large pot, warm the olive oil over medium heat. Add the beef stew meat and brown on all sides, about 5-7 minutes.
  2. Toss in the diced onion and chopped celery, stirring occasionally until softened, around 3-4 minutes.
  3. Stir in the minced cilantro and parsley, followed by the water, crushed tomatoes, lentils, and chickpeas.
  4. Add ground pepper, ground ginger, salt, ground turmeric, and ground cinnamon. Increase heat and bring to a boil.
  5. Lower the heat and let it simmer for about 30 minutes, stirring occasionally.
  6. Gently stir in the fideo noodles or broken vermicelli. Continue to cook for another 5-7 minutes until tender.
  7. Taste and adjust seasoning if needed, then ladle into bowls and garnish with additional cilantro.
