- Preheat your oven to 350°F (175°C). Prepare a casserole dish or line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground beef, breadcrumbs, finely chopped onion, minced garlic, beaten eggs, ketchup, Worcestershire sauce, dried thyme, dried oregano, salt, and pepper. Mix gently.
- Transfer the meat mixture into the prepared dish, shaping it into a loaf. Bake for 50-60 minutes, or until a meat thermometer reads 160°F (71°C).
- While the meatloaf bakes, heat unsalted butter in a skillet over medium heat. Add fresh mushrooms and sauté until golden brown, about 5-7 minutes.
- Sprinkle in the all-purpose flour, stirring with the mushrooms for about 2 minutes. Gradually whisk in the beef broth and heavy cream, cooking until the gravy thickens.
- Once the meatloaf has rested for a few minutes, slice it and serve hot, drizzled with the rich mushroom gravy.
