Ingredients
  

For the Chicken
  • 4 pieces skinless chicken legs
  • 4 pieces boneless, skinless chicken thighs
For the Cooking Base
  • 2 tablespoons olive oil
  • 2 cups Roma tomatoes chopped
  • 1 medium white onion chopped
  • 4 cloves garlic minced
For the Chiles
  • 4 pieces dried guajillo chiles seeded and chopped
  • 2 pieces dried ancho chile seeded and chopped
  • 1 piece dried chipotle chile seeded and chopped
For the Broth and Seasoning
  • 2 cups low-sodium chicken broth
  • 0.25 cup apple cider vinegar
  • 1 teaspoon salt to taste
  • 1 teaspoon coriander powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1 teaspoon Mexican oregano
  • 0.25 teaspoon ground cloves
  • 2 pieces dried bay leaves

Method
 

How to Make Mexican Chicken Adobo
  1. In a large pot, warm 1 tablespoon of olive oil over medium heat. Add the chicken legs and thighs, cooking until browned on all sides, about 8-10 minutes. Remove the chicken and set aside.
  2. In the same pot, add the remaining tablespoon of olive oil along with the chopped tomatoes, onion, and garlic. Sauté for around 5 minutes until softened.
  3. Add the seeded and chopped guajillo, ancho, and chipotle chiles, along with salt, coriander powder, cumin, thyme, oregano, ground cloves, and bay leaves. Stir to combine.
  4. Pour in the low-sodium chicken broth and apple cider vinegar. Place the browned chicken back into the pot, ensuring it's submerged in the mixture.
  5. Bring to a boil, then reduce heat to low and let it simmer for 45 minutes to 1 hour until the chicken is cooked through and tender.
  6. Before serving, taste and adjust seasoning with more salt if needed.
