How to Make Mini Meatloaf
  1. Preheat your oven to 350°F (175°C) for even baking.
  2. In a large bowl, mix the ground beef, minced onion, eggs, bread crumbs, Worcestershire sauce, pepper, seasoning salt, garlic powder, and ½ cup of ketchup until well combined.
  3. Divide the mixture and shape it into individual mini loaves, placing them in a baking dish or on a lined baking sheet.
  4. In a small bowl, combine the remaining ¼ cup of ketchup, brown sugar, and mustard for the glaze.
  5. Spoon the glaze over each mini meatloaf to coat them well.
  6. Bake for 30-35 minutes, or until the internal temperature reaches 160°F (70°C) and the glaze is bubbly.
  7. Let the mini meatloaves rest for 5-10 minutes before serving to allow juices to redistribute.
