Method
 

Making the Muffins
  1. Preheat the oven to 350°F (175°C).
  2. Combine the ground beef, vegetable oil, onion, bell pepper, barbecue sauce, Worcestershire sauce, breadcrumbs, egg, parsley, salt, and black pepper in a large bowl.
  3. Fold in the mozzarella cheese cubes gently.
  4. Divide the mixture evenly into a muffin tin, filling each cup about three-quarters full.
  5. Mix together the ketchup, chili sauce, brown sugar, and Dijon mustard in a separate bowl for the glaze.
  6. Spoon the glaze generously over each meatloaf muffin.
  7. Bake in the preheated oven for 25-30 minutes, or until the muffins are cooked through.
