  • 2 tablespoons Olive oil
  • 1 teaspoon Salt for potatoes
  • 0.5 teaspoon Black pepper for potatoes
  • 1 teaspoon Garlic powder for potatoes
  • 1 teaspoon Dried thyme or rosemary
  • Extra chopped parsley Optional garnish

Equipment

  • baking dish
  • mixing bowl

Method

Preparation
  1. Preheat your oven to 350°F (175°C). This step is crucial for ensuring your meatloaf bakes evenly and develops a beautiful crust.
  2. Combine all meatloaf ingredients in a large bowl, mixing together ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, black pepper, Italian seasoning, paprika, and parsley. Mix until well combined.
  3. Shape the meat mixture into a loaf. Place it in a baking dish, creating a snug fit so it retains its shape during baking.
  4. Prepare the glaze by mixing ketchup, brown sugar, and mustard in a small bowl. Spread this tasty mixture evenly over the top of the meatloaf for a caramelized finish.
  5. Toss the potatoes in another bowl with olive oil, salt, black pepper, garlic powder, and thyme or rosemary. Ensure each potato is coated for maximum flavor.
  6. Arrange the seasoned potatoes around the meatloaf in the same baking dish. This allows them to absorb juices for added taste as they roast.
  7. Bake everything in the preheated oven for about 1 hour, or until the meatloaf reaches an internal temperature of 160°F (71°C) and is beautifully browned.
  8. Let rest for 10 minutes once out of the oven. This resting period allows the juices to redistribute, making every slice succulent and tender.
  9. Garnish with extra chopped parsley for a fresh touch if desired.
