  • 3 stalks Green Onions Use both green and white parts.
  • 1 tbsp Fish Sauce Omit for a fish-free diet; soy sauce can substitute.
  • 1 tbsp Sriracha Adjust to your spice preference.
  • 1 tsp Sugar Honey or coconut sugar is an alternative.
  • 2 tbsp Cornstarch Breadcrumbs can also be used.
  • 1/2 tsp Black Pepper
  • 1 tsp Kosher Salt Adjust based on fish sauce saltiness.
For the Sriracha Mayo
  • 1/2 cup Mayonnaise Greek yogurt can be used for a healthier option.
  • 1 tbsp Toasted Sesame Oil Olive oil can be a substitute.
For Serving
  • 4 pieces Brioche Buns Any burger bun can be used.
  • 1 cup Cilantro Optional herb.
  • 1 piece Jalapeño Choose a milder pepper if desired.
  • 1 cup Persian Cucumbers Regular cucumbers can be used.

Method
 

Main Instructions
  1. In a large bowl, combine ground pork, basil, garlic, green onions, fish sauce, sriracha, sugar, cornstarch, black pepper, and salt. Mix gently until combined, then form into four patties, each about ⅓-inch thick.
  2. In a small bowl, whisk together mayonnaise, green onions, and sriracha until well blended.
  3. Heat sesame oil in a cast iron skillet over medium heat. Add the pork patties and cook for about 5 minutes per side, or until browned and the internal temperature reaches 160°F.
  4. Spread a generous layer of sriracha mayo on the bottom half of each toasted bun. Top with crunchy pickled vegetables, cilantro, jalapeño slices, and a delicious pork patty. Add cucumber slices, then finish with the top bun.
