- Season the pork chops generously with salt and black pepper on both sides.
- Sear in a large skillet over medium-high heat with olive oil and butter for 4-5 minutes on each side until golden brown.
- Sauté sliced mushrooms, diced bell peppers, and chopped onions in the same skillet for 5-6 minutes.
- Add minced garlic, dried oregano, dried basil, and red pepper flakes, cooking for another minute.
- Stir in the canned crushed tomatoes and chicken broth or wine, bringing the mixture to a simmer.
- Return the pork chops to the skillet, reduce heat to low, and cover. Simmer together for 8-10 minutes.
- Garnish with freshly chopped parsley before serving.
