- Slice the pork tenderloin into 1-inch thick medallions.
- Mix flour, garlic powder, onion powder, paprika, salt, and pepper in a plate or a zip lock bag.
- Dredge the medallions in the flour mixture and sear them in hot olive oil until golden brown.
- Sauté the onions and portabella mushrooms in the same pan over lower heat, adding butter and oil.
- Add the garlic and cook for an additional minute.
- Stir in flour or cornstarch, combining well with the vegetables.
- Pour in the Marsala or white wine, followed by chicken broth.
- Mix in the sour cream, returning the pork to the pan. Allow to simmer until sauce thickens.
- Cook the pasta according to package directions, then combine it with the sauce in the pan.
- Garnish with fresh herbs and serve immediately.
