How to Make Pressure Cooker Whole Chicken
  1. In a bowl, mix together the unsalted butter, minced garlic, chopped rosemary, thyme, lemon zest, salt, and pepper until well combined.
  2. Gently create pockets under the skin of the whole chicken and generously spread the compound butter beneath.
  3. Pour the low-sodium chicken broth into the bottom of the pressure cooker, place the chicken on the wire rack, and brush it with any remaining melted butter. Cook on high pressure for 15 minutes, then allow the pressure to naturally release for 5 minutes before quick-releasing the remainder.
  4. For a golden-brown finish, use your air fryer at 400°F for 10-15 minutes after pressure cooking.
