  • 2 tablespoons Soy Sauce Tamari for gluten-free or coconut aminos for a soy-free option.
  • 3 tablespoons Kewpie Mayo Regular mayonnaise or homemade mayo can be substituted.
  • 1 tablespoon Sriracha Can swap with preferred hot sauce or chili oil.
For Serving & Garnishing
  • 1 tablespoon Sesame Seeds Sprinkle on top for extra crunch.
  • 1 medium Avocado Can be diced or sliced.
  • 2 tablespoons Green Onions Finely chopped for garnishing.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) while you gather and prepare your ingredients.
  2. In a mixing bowl, combine cubed salmon with soy sauce, Kewpie mayo, and sriracha. Let it sit.
  3. In another bowl, mix your warm cooked sushi rice with rice vinegar and mirin.
  4. Line muffin tins with roasted nori sheets, filling each with a layer of sushi rice. Spoon marinated salmon on top.
  5. Place the muffin tin in the preheated oven. Bake for about 12 minutes.
  6. Remove from the oven and let cool slightly. Top each cup with sesame seeds, diced avocado, and chopped green onions.
