Steps to Make Shrimp Saganaki
- In a deep skillet, warm 2 tablespoons of olive oil over medium heat.
- Add 1 chopped shallot and 2 minced garlic cloves, sautéing until fragrant, about 2-3 minutes.
- Incorporate 2 cups of halved cherry tomatoes, cooking until they burst and release their juices, about 5-6 minutes.
- Mix in ½ cup of halved Kalamata olives and ¾ cup of water, reduce heat to medium-low and simmer for 2-3 minutes.
- Carefully place 1 pound of deveined jumbo shrimp into the sauce, cover and cook until pink and opaque, about 3 minutes.
- Stir in the zest and juice of 1 lemon and 2 tablespoons of fresh dill, then sprinkle 1 cup of cubed feta cheese on top.
