Ingredients
  

For the Chicken
  • 2 pounds Chicken Thighs can substitute with chicken breasts
  • 2 tablespoons Olive Oil can use avocado or melted coconut oil
  • 4 cloves Garlic (minced)
  • to taste Salt
  • to taste Pepper
For the Spices
  • 2 teaspoons Ground Cumin
  • 2 teaspoons Ground Coriander
  • 1 teaspoon Smoked Paprika can substitute with regular paprika
  • 1 teaspoon Ground Turmeric
  • 1 teaspoon Ground Cinnamon optional
  • 1/2 teaspoon Cayenne Pepper can omit for milder version
For the Base and Garnishes
  • 1 large Onion (sliced)
  • 2 tablespoons Lemon Juice splash of vinegar can substitute
  • 1/4 cup Fresh Parsley (for garnish) can swap with cilantro
For Serving
  • 4 pieces Pita Bread or Rice gluten-free options like wraps or quinoa work too
  • 1/2 cup Yogurt or Tahini Sauce optional but recommended

Method
 

Directions
  1. In a bowl, mix together the olive oil, minced garlic, all spices, and lemon juice.
  2. Place the sliced onion at the bottom of your slow cooker. Top it with the seasoned chicken thighs.
  3. Cover the slow cooker and set it to low for 6 hours or high for 3 hours.
  4. Once cooked, use two forks to shred the chicken directly in the cooker.
  5. Warm up your pita or prepare rice. Fill with shredded chicken and garnish.
