Shallot Sauce
  • 1 medium Shallot Grate one and finely chop another.
  • 1 tablespoon Dijon Mustard Substitute with whole grain mustard if desired.
  • ½ cup Mayonnaise Low-fat mayo can lighten it up.
  • 1 tablespoon Red Wine Vinegar Champagne vinegar is a suitable alternative.
  • 1 tablespoon Olive Oil Consider avocado oil for a different flavor.
Assembly
  • 2 cups Fresh Arugula or Baby Spinach Add peppery freshness beneath the salmon.
  • 8 ounces Smoked Salmon or Lox Gravlax or roasted salmon can be used instead.
  • ½ cup Asiago Cheese Shaved for a nutty topping.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Prepare the puff pastry by unfolding it and cutting it into 25 squares.
  3. Bake the pastry for 11-13 minutes or until they are golden brown.
  4. Grate one shallot and finely chop the other.
  5. Mix the grated shallots, Dijon mustard, mayonnaise, and red wine vinegar in a small bowl.
  6. Whisk in the olive oil slowly until the sauce becomes emulsified and smooth.
  7. Assemble your bites by placing a spoonful of shallot sauce on each baked pastry square.
  8. Layer with fresh arugula and then add thin slices of smoked salmon on top.
  9. Drizzle the remaining shallot sauce over each bite and sprinkle finely shaved Asiago cheese before serving.
