Ingredients
  

For the Manicotti
  • 12 pieces Manicotti Shells or any large pasta tube
For the Meat Sauce
  • 1 pound Ground Beef or ground turkey/chicken
  • 1/2 pound Italian Sausage sweet or spicy
  • 1 medium Onion or shallots
  • 3 cloves Garlic fresh, minced
  • 24 ounces Marinara Sauce store-bought or homemade
For the Filling
  • 15 ounces Ricotta Cheese or cottage cheese
  • 2 cups Mozzarella Cheese shredded, reserve some for topping
  • 1/2 cup Parmesan Cheese or nutritional yeast for vegan
  • 1 large Egg or flaxseed egg for vegan
For Seasoning
  • 1 teaspoon Dried Basil or fresh herbs
  • 1 teaspoon Dried Oregano or fresh herbs
  • to taste Salt
  • to taste Pepper

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Cook manicotti shells in a large pot of boiling salted water for 6-7 minutes, until just al dente. Drain and lay on a baking sheet to cool slightly.
  3. Brown the ground beef and Italian sausage in a large skillet over medium heat. Add chopped onion and cook for about 8 minutes until the meat is browned and onions are translucent. Drain excess fat.
  4. Add minced garlic to the skillet and sauté for about 1 minute until fragrant. Pour in the marinara sauce and let it simmer for 10 minutes.
  5. Combine filling ingredients by mixing ricotta cheese, reserved mozzarella, parmesan, egg, dried basil, oregano, salt, and pepper in a bowl until creamy.
  6. Spread half of the meat sauce in the bottom of a baking dish. Fill each manicotti shell with the ricotta mixture and arrange them seam-side down in the dish.
  7. Cover the stuffed shells with the remaining meat sauce and sprinkle reserved mozzarella on top.
  8. Cover the dish with foil and bake for 30 minutes. Then uncover and bake for an additional 10 minutes.
  9. Let the manicotti rest for 5 minutes before serving.
  10. Optional: Garnish with fresh basil before serving.
