Ingredients
  

For the Beef Mixture
  • 1 pound Lean Ground Beef
  • 1 medium Chopped Onion
  • 1 cup Sliced Celery optional; substitute with bell peppers if desired
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste
For the Creamy Base
  • 1 can Condensed Cream of Celery Soup can substitute with cream of mushroom or cheddar soup
For the Topping
  • 32 ounces Frozen Tater Tots
  • 1 cup Shredded Cheddar Cheese optional
For Garnish
  • Chopped Fresh Parsley or Chives optional but recommended

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, brown the lean ground beef with chopped onion and sliced celery over medium heat for about 10 minutes, until the beef is fully cooked.
  3. Drain any excess fat and season the mixture with salt and pepper.
  4. Transfer the cooked beef mixture into a greased 3-quart baking dish and spread the creamy soup evenly over the beef mixture.
  5. Layer the frozen Tater Tots in a single layer on top of the creamy base.
  6. Bake uncovered for 40 minutes, or until bubbly and the Tater Tots are golden brown.
  7. Sprinkle shredded cheddar cheese over the hot dish and return to the oven for an additional 5 minutes.
  8. Optionally, garnish with fresh parsley or chives before serving.
