Method
 

Preparation Steps
  1. Rinse the octopus under cold water, ensuring it's clean for optimal flavor.
  2. Prepare a pot with boiling water and add in celery, lemon, bay leaves, peppercorns, salt, and optional wine cork.
  3. Dip the octopus tentacles into the boiling water three times, then simmer for 40-45 minutes until tender.
  4. Cook the squid in a new pot of boiling water for about 2 minutes, then set aside.
  5. Prepare the shrimp in the same pot, cooking for 2 minutes until just done.
  6. Mix the dressing ingredients in a bowl or jar and whisk until well blended.
  7. Combine all the seafood in a large bowl, dress with the mixture, and adjust seasoning before serving at room temperature.
