Preparation Steps
- Rinse the octopus under cold water, ensuring it's clean for optimal flavor.
- Prepare a pot with boiling water and add in celery, lemon, bay leaves, peppercorns, salt, and optional wine cork.
- Dip the octopus tentacles into the boiling water three times, then simmer for 40-45 minutes until tender.
- Cook the squid in a new pot of boiling water for about 2 minutes, then set aside.
- Prepare the shrimp in the same pot, cooking for 2 minutes until just done.
- Mix the dressing ingredients in a bowl or jar and whisk until well blended.
- Combine all the seafood in a large bowl, dress with the mixture, and adjust seasoning before serving at room temperature.
