  • 1/2 cup White Granulated Sugar brown sugar can be used
  • 2 tablespoons Corn Flour optional but recommended
  • 2 cups Full-Fat Milk can be omitted if using only milk powder
  • 1 teaspoon Cardamom Powder vanilla extract can be an alternative
Croissants
  • 4 Store-Bought Croissants fresh or day-old
Toppings
  • 1 cup Whipped Cream flavored whipped cream adds extra kick
  • 1/2 cup Chopped Nuts almonds or pistachios recommended

Preparation Steps
  1. Prepare the Rabdi: In a medium pot, combine water, milk powder, and sugar. Cook over medium heat until the mixture thickens, stirring often, about 10-15 minutes. Mix corn flour with a tablespoon of milk to create a slurry; stir this into the pot to thicken further. Add cardamom powder, then remove from heat and allow it to cool completely.
  2. Assemble Croissants: Take your croissants and lightly soak them in the cooled Rabdi, ensuring they absorb flavor without becoming soggy. Generously fill each croissant with the luscious Rabdi custard, allowing it to spill slightly for a delightful presentation.
  3. Add Toppings: Top each filled croissant with a dollop of whipped cream for added richness and garnish with chopped nuts for a delicious crunch.
  4. Chill: Place the assembled croissants in the refrigerator for at least 2 hours to meld the flavors.
