For the Meatloaf
  • 2 tablespoons Olive Oil Use extra virgin for a richer taste.
  • 1 medium Red Bell Pepper Can substitute with yellow or green bell pepper.
  • 1 medium Red Onion Yellow onion can be used for a milder flavor.
  • 2 cloves Garlic Fresh minced garlic is preferred.
  • 2 pounds Ground Beef Can substitute with ground turkey or chicken.
  • 1 cup Italian Style Breadcrumbs Gluten-free breadcrumbs work for a gluten-free option.
  • 1/2 cup Parmesan Cheese Grated cheese is recommended.
  • 2 large Eggs A flax egg can be used for a vegan option.
  • 3 tablespoons Tomato Paste Ketchup can be used if needed.
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Fresh Parsley Dried parsley can be used in lesser amounts.
  • 8 slices Deli Ham Prosciutto can be used for a gourmet twist.
  • 1/4 cup Fresh Basil Leaves Dried basil can be substituted.
  • 2 cups Shredded Mozzarella Cheese Any melting cheese can be used.
For Serving
  • 2 cups Marinara Sauce Homemade or store-bought.
  • 4 cups Cooked Pasta or Zucchini Noodles

Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175 °C).
  2. Sauté the onion and red pepper in olive oil for 5 minutes until translucent. Add the garlic and let it cook for an additional minute.
  3. Combine ground beef, breadcrumbs, parsley, parmesan, eggs, tomato paste, salt, pepper, and cooled vegetable mix in a large bowl and mix well.
  4. Shape the mixture into a rectangle (approximately 8"x15") on a piece of parchment paper.
  5. Layer the rectangle with deli ham slices, fresh basil leaves, and shredded mozzarella cheese, leaving a 1-inch border around the edges.
  6. Roll it up tightly, sealing the ends and seam well.
  7. Transfer the rolled meatloaf onto a baking sheet lined with parchment paper.
  8. Bake in the oven for 1 hour, tenting with foil for the last 10 minutes.
  9. Rest the meatloaf for 10 minutes before slicing.
  10. Serve over pasta or zucchini noodles, topped with marinara sauce.
