  • 1 pound Ground Pork Can replace with extra ground beef or veal if preferred.
  • 1 pound Ground Veal Omit for a beef and pork-only mix.
  • 2 large Eggs Binds the mixture to maintain shape.
For the Binder and Flavor Base
  • 1 cup Breadcrumbs Use Italian-style or make your own from day-old bread.
  • 1 large Onion Finely chopped for even cooking.
  • 1 large Bell Pepper Finely chopped.
  • 2 stalks Celery Finely chopped.
  • 4 cloves Garlic Must be minced.
For the Fresh Herbs and Seasoning
  • 1/4 cup Parsley Chopped.
  • 1/4 cup Basil Fresh is preferred.
For the Rich Finish
  • 1/2 cup Parmesan Cheese Grated.
  • 1 cup Tomato Sauce Homemade or store-bought marinara can be used.

Preparation
  1. Prepare Oven: Preheat your oven to 375°F (190°C). This ensures the perfect cooking environment for your Sicilian meatloaf.
  2. Sauté Vegetables: In a skillet, add olive oil and sauté the finely chopped onion, bell pepper, and celery for 5-7 minutes. Once softened, mix in the minced garlic for another minute until fragrant.
  3. Mix Ingredients: In a large bowl, combine the ground meats, sautéed vegetables, breadcrumbs, grated Parmesan, eggs, herbs, salt, and pepper. Gently mix until just combined, avoiding overmixing for a lighter texture.
  4. Shape & Bake: Transfer the mixture to a baking sheet or loaf pan, forming a loaf shape. Spread half of the tomato sauce on top. Bake in the preheated oven for 1 hour until the internal temperature reaches 160°F (71°C) and the top is golden.
  5. Rest & Serve: Allow the meatloaf to rest for 10-15 minutes post-baking. This resting phase is crucial for juicy slices. Serve with the remaining tomato sauce and garnish with fresh herbs for added flavor.
