Directions
- Season the pork chops generously with salt and black pepper on both sides.
- Heat the olive oil in a skillet over medium-high heat until shimmering.
- Sear the pork chops for 4-5 minutes on each side until golden-brown and cooked through.
- Remove the pork chops from the skillet and set aside on a plate to rest.
- Add the flour to the skillet, stirring it into the remaining oil to form a roux.
- Gradually pour in the broth while stirring continuously to prevent lumps.
- Mix in vinegar, honey, butter, chili powder, garlic powder, onion powder, smoked paprika, sage, marjoram, and additional salt and pepper.
- Simmer the gravy, stirring until thickened and bubbles form, about 3-5 minutes.
- Pour the gravy over the rested pork chops and serve immediately.
