- Brown the sausages on all sides in a large skillet over medium heat until golden brown. Slice them and place them in the slow cooker.
- In the same skillet, add sliced yellow onions and sauté for about 5 minutes until soft and translucent.
- Toss in minced garlic and curry powder with the onions, stirring and cooking for another 2 minutes until fragrant.
- Pour the onion mixture over the sausages in the slow cooker. Add chopped potatoes, carrots, salt, pepper, sugar, and beef broth, stirring gently to combine.
- Cover and set the slow cooker to high for 4-5 hours or low for 6-8 hours.
- About 30 minutes before serving, stir in the frozen peas and coconut milk, allowing it to cook until the peas are tender.
- Ladle the curried sausages into bowls and serve hot with rice or naan.
