For the Sausages
  • 4 pieces Thick Sausages Choose high-quality sausages; vegetarian alternatives can also be used.
For the Vegetables
  • 1 medium Yellow Onion White onions or shallots are excellent substitutes.
  • 3 cloves Garlic Garlic powder can serve as an alternative.
  • 2 medium Carrots Parsnips or sweet potatoes can be swapped in.
  • 2 medium Potatoes Yams or turnips work well too.
  • 1 cup Frozen Peas Fresh or canned peas can be substituted.
For the Sauce
  • 2 tablespoons Curry Powder Adjust based on spice tolerance; turmeric and cumin are alternatives.
  • 2 cups Beef Broth Chicken or vegetable broth can be used.
  • 1 can Coconut Milk Light coconut milk or cream for a dairy-free option.
  • 1 tablespoon Sugar Maple syrup or honey can be substitutes.
  • 1 teaspoon Salt Adjust according to taste preferences.
  • 1 teaspoon Black Pepper Modify according to preferred spice level.

Method
 

Instructions
  1. Brown the sausages on all sides in a large skillet over medium heat until golden brown. Slice them and place them in the slow cooker.
  2. In the same skillet, add sliced yellow onions and sauté for about 5 minutes until soft and translucent.
  3. Toss in minced garlic and curry powder with the onions, stirring and cooking for another 2 minutes until fragrant.
  4. Pour the onion mixture over the sausages in the slow cooker. Add chopped potatoes, carrots, salt, pepper, sugar, and beef broth, stirring gently to combine.
  5. Cover and set the slow cooker to high for 4-5 hours or low for 6-8 hours.
  6. About 30 minutes before serving, stir in the frozen peas and coconut milk, allowing it to cook until the peas are tender.
  7. Ladle the curried sausages into bowls and serve hot with rice or naan.
