Method
 

Cooking Instructions
  1. Begin by heating a cast-iron skillet or griddle over medium-high heat. Wait for about 3-5 minutes, or until water droplets sizzle and dance on the surface.
  2. Lightly brush the outer side of each tortilla with mayonnaise.
  3. Press a handful of ground beef onto one side of each tortilla and season generously with salt, pepper, and garlic powder.
  4. Cook the tortilla, beef-side down, for 2-3 minutes until it turns crispy and browned. Gently flip the quesadilla over.
  5. After flipping, sprinkle your shredded cheese over the beef. Fold the tortilla in half and grill both sides for another 1-2 minutes until the cheese is melted and the tortilla is golden brown.
  6. Let the quesadillas rest briefly before slicing them into triangles. Serve warm with your choice of toppings.
