- Begin by heating a cast-iron skillet or griddle over medium-high heat. Wait for about 3-5 minutes, or until water droplets sizzle and dance on the surface.
- Lightly brush the outer side of each tortilla with mayonnaise.
- Press a handful of ground beef onto one side of each tortilla and season generously with salt, pepper, and garlic powder.
- Cook the tortilla, beef-side down, for 2-3 minutes until it turns crispy and browned. Gently flip the quesadilla over.
- After flipping, sprinkle your shredded cheese over the beef. Fold the tortilla in half and grill both sides for another 1-2 minutes until the cheese is melted and the tortilla is golden brown.
- Let the quesadillas rest briefly before slicing them into triangles. Serve warm with your choice of toppings.
