- In a large mixing bowl, whisk together the eggs, minced red onion, green chili, ground turmeric, kosher salt, cilantro, and milk or water until well blended and frothy.
- Place a frying pan over medium heat and drizzle in a little oil or add a pat of butter. Allow it to melt and get hot.
- Carefully pour the egg mixture into the pan, watching as the edges begin to firm up, about 2-3 minutes.
- Gently stir the mixture with a spatula, cooking until the eggs are fully set, about 5-7 minutes.
- While the eggs are cooking, toast the slices of bread until golden brown and crispy. Serve the cooked egg mixture atop the toast.
