How to Make Dragon Noodles
  1. Bring a pot of water to a boil and cook the ramen noodles or rice noodles according to the package instructions, approximately 4-5 minutes. Drain well and set aside.
  2. In a large pan, heat the vegetable oil over medium heat. Allow the oil to shimmer, then add the minced garlic, sautéing until fragrant for about 1-2 minutes.
  3. Add the chili paste, soy sauce, oyster sauce, brown sugar, and sesame oil to the pan. Stir until well combined, letting the flavors meld for about 2 minutes.
  4. Carefully add the cooked noodles into the sauce mixture. Gently toss to coat the noodles evenly, ensuring every strand is saturated with delicious flavors.
  5. Push the noodles to one side of the pan. Pour the beaten eggs into the other side and scramble until just cooked through, approximately 2-3 minutes.
  6. Stir the scrambled eggs into the noodle mixture until well incorporated. Cook for another minute to let everything heat through.
  7. Plate your Dragon Noodles and garnish generously with chopped green onions and a sprinkle of sesame seeds for that delightful finishing touch.
