Ingredients

For the Beef
  • 1 lb Ground Beef Use lean beef for a healthier option.
  • 4 tbsp Soy Sauce Choose low-sodium varieties for a healthier kick.
  • 2 tsp Sesame Oil Provides a rich, nutty depth.
  • 2 tbsp Gochujang (Korean chili paste) The star for spice; substitute with sriracha if you prefer milder heat.
  • 1 tbsp Brown Sugar Balances the spice with sweetness.
  • 2 cloves Garlic Freshly minced garlic enhances the flavor.
  • 1 inch Fresh Ginger Fresh is recommended for best results.
For the Cucumber Salad
  • 3 tbsp Rice Vinegar Brightens the salad's flavor.
  • 2 Cucumber Use pickling cucumbers for extra crunch.
  • 2 stalks Green Onions Adds freshness.
  • 1 tbsp Sesame Seeds Provides garnish and a nutty touch.

Equipment

  • large skillet

Method

Cooking Instructions
  1. In a large skillet, heat over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes, making sure to break it up as it cooks. Drain any excess fat afterwards.
  2. Stir in the soy sauce, sesame oil, gochujang, brown sugar, minced garlic, and freshly grated ginger. Cook for an additional 3-4 minutes, allowing the sauce to thicken and coat the beef evenly.
  3. In a separate bowl, combine sliced cucumbers with rice vinegar and a pinch of salt. Let the mixture sit for about 5 minutes; this enhances the flavor and crunch of the salad.
  4. Plate the beef alongside the fresh cucumber salad. Garnish with sesame seeds and chopped green onions.
