Ingredients
  

For the Soup
  • 11 oz Soft tofu this creamy base is the heart of the dish
  • 0.5 cup Mushrooms enoki or sliced shiitake
  • 1 example Egg gently cracked into the soup just before serving
  • 1 teaspoon Toasted sesame oil provides a nutty aroma
For Seasoning
  • 0.5 teaspoon Sea salt (or to taste)
  • 0.33 teaspoon Sugar (or to taste)
  • 2 tablespoons Korean red pepper flakes for that signature spicy kick
For Protein (Optional)
  • 0.5 cup Protein of choice shrimp, chicken, beef, or pork
For the Broth
  • 0.5 cup Water or stock helps create a rich backdrop
  • 0.33 cup Kimchi chopped with juice
  • 0.25 cup Onions diced, sautéed until translucent
  • 3 cloves Garlic minced
For Garnishing
  • Scallions chopped, optional

Method
 

Directions
  1. In a pot, warm up the vegetable oil over medium heat. Add the diced onions and sauté until they become translucent, about 3-5 minutes.
  2. Once the onions are ready, stir in the minced garlic. Cook for another minute.
  3. Stir in the chopped kimchi along with its juice and follow this with the water or stock, bringing it all to a lively boil.
  4. Gently add the soft tofu and your choice of protein. Let it simmer for about 5 minutes.
  5. Stir in the Korean red pepper flakes, salt, and sugar to taste.
  6. Crack an egg directly into the soup just before serving. Drizzle with sesame oil.
  7. If desired, sprinkle chopped scallions on top.
