  • 4 medium Tomatoes Freshness is key; canned in a pinch
  • 3 stalks Green Onions Adds mild flavor and crunch
  • 1 cup Cilantro Substitute with parsley if needed
  • 2 cloves Garlic Adjust based on preference
  • 1 teaspoon Ground Cumin Omit for lighter flavor
  • 1 teaspoon Kosher Salt Regular salt can be swapped
  • 1 teaspoon Garlic Powder Optional if using fresh garlic
  • 1/2 teaspoon Freshly Ground Black Pepper White pepper can be used
  • 1/4 teaspoon Red Pepper Flakes Fresh Serrano peppers can be substituted
  • 2 tablespoons Lime Juice Can be replaced with lemon juice
For the Eyeballs
  • 1 cup Mozzarella Balls (Ciliegine) Use ciliegine for best effect
  • 10 pieces Pimento Olives Regular-sized for best effect

How to Make Halloween Eyeball Salsa
  1. Chop the tomatoes into small, bite-sized pieces and thinly slice the green onions. Toss together in a mixing bowl.
  2. Mince the cilantro leaves and garlic cloves. Add to the bowl with cumin, salt, garlic powder, pepper, red pepper flakes, and lime juice. Stir well.
  3. Slice the pimento olives in half for later use.
  4. Using a 1/4 teaspoon, scoop a small hole from the center of each mozzarella ball and insert a pimento half.
  5. Place the mozzarella eyeballs on top of the salsa and serve with crispy tortilla chips.
