Equipment

  • Pot for Rice

Method

Preparation
  1. Cook Rice: Start by preparing the rice according to package instructions. Once done, fluff it with a fork and set it aside to stay warm and fluffy.
  2. Prep Broccoli: Chop the broccoli into small florets, ensuring they're bite-sized. Set them aside while you focus on the chicken.
  3. Season Chicken: Slice the chicken breasts into thin strips. Season generously with salt, pepper, chili powder, smoked paprika, onion powder, and oregano.
Cooking
  1. Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken strips and cook until they are golden brown and fully cooked—about 5-7 minutes.
  2. Prepare Broccoli: In the same skillet, add the broccoli. Steam or sauté them until they are tender and vibrant green, about 3-4 minutes.
  3. Make Sauce: In a bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, sriracha, sesame oil, ground ginger, and arrowroot powder. Pour this mixture over the chicken in the skillet and simmer, stirring occasionally, until thickened, approximately 3-5 minutes.
Assembly
  1. Mix Spicy Mayo: Combine mayonnaise with sriracha and a splash of water in a bowl. Mix until smooth.
  2. Assemble Bowls: Layer the fluffy rice in bowls, top with the glazed chicken and broccoli, drizzle with the spicy mayo, and finish with a sprinkle of sesame seeds.
