Ingredients
  

For the Meatloaf
  • 1 lb Ground Beef Use 80/20 for juiciness
  • 1 lb Ground Italian Sausage Can be substituted or omitted
  • 1 cup Breadcrumbs Substitute with gluten-free breadcrumbs if needed
  • 2 large Eggs Binds the mixture
  • 1 tsp Garlic Powder Can use fresh garlic
  • 1 tsp Onion Powder
  • 1 tbsp Italian Seasoning Mix of dried basil, oregano, and thyme is a substitute
  • 1 tsp Salt
  • 1/2 tsp Pepper
For the Cheese Filling
  • 1 cup Mozzarella Cheese Can swap for provolone or cheddar
  • 1/2 cup Parmesan Cheese Adds tanginess
  • 1 cup Spinach Optional; can be omitted
For Serving
  • 1 cup Marinara Sauce Homemade or store-bought

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, Italian sausage, breadcrumbs, eggs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix gently until just combined.
  3. In a separate bowl, mix the mozzarella and Parmesan cheeses together. Optionally, add spinach.
  4. Flatten the meat mixture into a rectangle. Spread the cheesy filling evenly, then roll it up, sealing the edges tightly.
  5. Place the rolled meatloaf seam-side down onto a baking sheet or in a loaf pan. Bake for 45-50 minutes until the internal temperature reaches 160°F (71°C).
  6. In the last 10 minutes of baking, spread marinara sauce over the top.
  7. Let the meatloaf rest for about 10 minutes before slicing. Serve warm.
